Oxford pork arrives from Rofford Farm
Fabulous pork from our Oxford Sandy and Black pigs is currently arriving in our kitchens from our owner’s Oxfordshire Farm.
Look out for Rofford Farm pork chump with apple sauce, broad and runner beans, currently served as a special at Quod.
We continue to serve crisp belly pork with apple sauce for our Sunday roast.
Chump steaks are served with runner beans and peas; shoulders have been diced, marinated and cooked very slowly to serve alongside caramelised Rofford fennel. There is something very special about pork and fennel together – even just a handful of seeds will compliment our fantastic pork.
Other pork dishes watch out for, pork chops with little cocoa beans, rosemary and sage and a classic dish of brawn.
We hope you appreciate the flavour and texture of our locally bred and reared pork, in the meantime I’m working on smoking the bacon which should be ready in a couple of weeks.
