Autumn the most exciting time of year for chefs
Autumn is perhaps, along with spring, the most exciting part of the year for chefs. We are inundated with ingredients & options in the best way.
We have the pork from Rofford Farm & are just about to take delivery, next week in fact, of the first of the pure bred Aberdeen Angus. The Oxford sandy & black pork is coming in half sides & also cut down into the primal cuts. We are really trying to extend the abilities & craft skills of more of our chefs some who perhaps have never previously seen the half side of an animal.
Alicia, head chef at the Old Parsonage has taken delivery of half veal from Dumfries & is serving this on her new menu, braised with salsify, sprouts & bacon. As a special try veal liver with roasted apples & sauteed potatoes.
All the mushrooms are around, with chanterelles the best at the moment. Try great ceps on the new seasonal pizza at Quod.
Back on the menu at Quod due to popular demand is roast chicken with chips & aioli – take your choice of breast or leg. Head Chef Michael Wright has taken great care to source a free range corn fed chicken, it is marinated for two days & then he weaves his magic to present it to you. Try the new chips & let us know what you think.
Cob nuts abound. Similar to hazelnuts but slightly softer, really good to eat with cheese or a glass of red wine.
All the game birds & four legged animals appear on our menus at this time of year. Pheasants & grouse are being served in all the restaurants, so take your pick. Venison goes particularly well with quince.
There are plans afoot to tie up with some Oxfordshire farmers who we have been in contact with through Cultivate Oxford. They will start supplying us with vegetables at Gee’s & then the Old Parsonage.
We are working really hard on improving our quality & continuing to give you value for money.
